Pig Shak BBQ began when Roy Damien from the Mississippi delta was feeling the crunch of a declining pig farming business. He came up with the concept of a mobile barbecue restaurant with his trailer going from place to place selling his fine meats. Pig Shak became a sit-down restaurant when Mike and Chad Watkins got involved and rolled out the first walk-in diner in Madison in 2003. Now with 4 franchise locations in the metro area, the Pig Shak is definitely making their fine barbecue a household name.
The food: The main offerings are plates and platters of pulled pork, pulled chicken or hickory smoked sausage, known as the Pig Shak hearty plates, which are served with two sides for the low price of $6.99. Or step up to the half barbecue chicken, pork loin, or ham for $7.99, or try the beef brisket or half slab of pork ribs for $8.29 and $11.99. You certainly won’t be disappointed with any of the plates. If you can’t quite decide on your meat of choice, check out one of the combo Pig Shak platters with options of two meats or three meats. Sandwiches and po-boys can also be found, filled with pork, chicken, pork loin, sausage, ham or brisket. They also offer whole wheat buns for your sandwiches which are pretty darn good.
The great selection of delicious sides to go with your platter or sandwich consist of their own “tater” salad, turnip greens, barbecue beans, cole slaw, some mighty fine mac and cheese, Shak taters, new taters or a petite corn on the cob. You might have a difficult time settling on which two sides to go with your meal, that’s for sure.
They also offer a side salad, a regular salad or a Pig Shak salad filled with your choice of pork, chicken or ham with an array of dressings to go with them. Then there’s the desserts consisting of lemon, chocolate or pecan pies or cheesecake. They usually have a dessert of the day which is always pleasing.
Now for the carry out, catering or partying, there are plenty of selections available. Be sure to give them a call to order your bulk smoked meats, party paks, or the special “sow”perior sandwich paks.
Don’t forget to try a nice bag of their fresh pig skins, packaged ready to eat with choices of barbecue, regular, ranch or hot and spicy as they are great for snacking or enjoying with one of their fine sandwiches.
The drink: There’s plenty to choose from at the Pig Shak waterin’ hole with a good soft drink selection, bottled water, and iced tea with free refills. Iced cold domestic beer by the can is sure to please the adult beverage seeker with a variety of selections.
The scene: Think about an old, down-home barbecue joint in the heart of the South. As soon as you walk in the doors, the smells of the delicious meats fill the air. Their décor consists of great red and white table cloths, plenty of table seating and some of the most friendly service you will find in the area. They have a unique theme for their decor, where most items adorning the walls are printed on spare pieces of wood, for that old-tyme feel. There’s lots of memorabilia on the walls featuring plenty of pigs, country style signs, even an Uncle Sam poster with “eat more pork.”
The bottom line: The Pig Shak is worthy of a visit for a very enjoyable sit down meal, or a stop by for some takeout for lunch or dinner at home. If you are looking for eat off the floor dining and high prices, they might not be for you. They are just downright good, expanding their franchise offerings around the state with more to come real soon. No matter where you live or work in the metro area a Pig Shak is nearby with their 4 locations in Byram, Madison, Brandon, and Richland. By the first of 2010 a new franchised location will find a great home and welcoming customers in Clinton.
